Some of the Danish wools that were designed in the 50s and 60s are still in production; go to maharam.com and do a search for Kvadrat (Maharam is the US distributor for this Danish mill). Tonus and Hallingdal are about the most popular and widely used and come in a ton of colors. Tonika is also good and there are a few others. Kvadrat makes a lot of synthetics for contemporary furniture, but you should avoid those.
An upholsterer will be able to order directly from Maharam. You can also find a lot of mill ends from Maharam on modern-fabrics.com for less than wholesale but the selection is hit or miss. Sometimes you can get really lucky, though!
You should use 1" or 1.5" thick latex foam on this chair. Stick a needle straight into it and mark the depth to be sure. Latex is not widely available and it costs more than urethane foam, but it is definitely in production.
