Only recently has Fritz Hansen started stitching a red fabric tag onto the chairs. Prior to that my understanding is that the chairs were labelled on the underside with a paper sticker stuck to the steel mounting plate.
You should study the chair as much as possible - many of the knock-offs elongate or condense the proportions and this can be easy to spot if you are familiar with the real thing. Also try to see as many authentic Egg chairs as possible - the quality on them compared to most current knock-offs is really outstanding. The stitching should be precise and even, with just a little raised texture on the threads. (I've seen knockoffs that look like they were sewn with baling twine!)
You should also keep an eye on other indicators: a shifty dealer, dramatically low prices, inconsistent photos - all should be warning signs.
