We have 2 older womb chairs on which the foam has hardened. We live in New Mexico, and have not yet found an upholsterer who has any experience with them, but are still looking.
Can a good general upholsterer figure out how to re-foam these chairs?
Is there standard Knoll fabric we should order for them (we want soft, not leather or wool).
How much should we expect to pay for re-foaming and re-covering?

It would really be best to find someone who's done a Womb chair before; I don't know anyone in New Mexico, but if you don't mind driving the chairs up to Denver, there's undoubtedly someone there who can do a good job. Maybe call Zeitgeist (303 298-8432) and ask whether they can recommend an upholsterer.
I guess the "standard" upholstery is Knoll Hopsack, but you can use any Knoll upholstery fabric on that chair. Click the link below to search all of Knoll's textiles.
You'll need about 7.5 yards of fabric for each chair; if you have ottomans, they'll need an additional 2.5 yards each.
If you buy your fabric from Knoll, it can cost a lot -- 15 yards of Hopsack costs around $450, and 15 yards of Velvet is almost $2000 -- so you may want to look for other sources, perhaps on Ebay. And that's another reason to go to an upholsterer who does a lot of Knoll furniture; he may have fabric that he'll sell for less than what Knoll would charge.
I have no idea what prices are like in New Mexico or Colorado, but I'd be very surprised if you could find someone competent to refoam and reupholster a Womb chair for less than $400... And I'd be equally surprised if it cost more than $800.
