I think maybe the OP's chair with the bad upholstery has too much padding on the wings! They look at least an inch wider than the ones in the other photo. It looks like the second chair has relatively thin padding that tapers to very thin at the edge of the wing, whereas the first chair probably has at least 1" thickness at the edge and possibly wrapping around to the back of the wing edge, too, given the way the fabric does that. The outside back cover fabric of the wing would be stapled to the frame at the frame's edge or close to it, so all that area past the outside back cover is extra padding (and thus, width).
Does that make sense? Alternate explanation: the wings need liposuction.
