Does anyone have recommendations for how to polish original George Nelson Herman Miller dressers? I'm pretty sure mine are oak veneer.

I'm not looking to change the colour or make them especially shiny, I just want to protect them.

The best product is
Howard "Feed-N-Wax"
It's beeswax and orange oil, easy to apply and totally safe.
I use is on my Nelson CSS walnut shelves, my old 1928 floor model phonograph and on any of wood products I have.
Of course, don't use it any sealed wood (varnished, lacquered, etc.) but it's 100% safe to use any other kind of wood. It will not change the color.

I'm embarrassed to say that...
I'm embarrassed to say that I'm not sure how the dressers have been treated. The finish is kind of shiny so I would assume that they are in fact varnished or treated in some other way.

The original finish is...
The original finish is probably some kind of clear cellulose - your options are either to live with it, strip it and refinish completely (get expert help) or try waxing it anyway which is totally removable and may brighten it up a lot

Absolutely...try the Howard Feed N Wax
If it seems to smear, then your wood is sealed and you'll just need to wipe up the Feed N Wax. No problem. It will not ruin your finish!
