just do what you suggested. Hunt around for a decent coffee table and then get out the saw. I am looking at 2 nice coffee tables right now (in my living room) that I just tried sitting in front of with a pillow and my laptop and both seemed decent. The slightly higher one was more comfortable as a work surface. The fun part of course is hunting for the right table
Ikea - Vika System
Well, in that case I'm considering an Ikea system that offers legs and tops separately. One advantage is I can tailor the height, and I can replace a leg if I screw up the sawing.

I'd love to have *that* table, but I can't find it for sale anywhere. Apparently (as you may know) it's called the Zataku dining table by Hara Design. But for the life of me I can't find a single place where it's for sale--just blogs posting pics and descriptions.
But I will look for other Japanese tables.
