My final choice
OK, I spent months looking for this fabric, I received a lot of samples, and I had great suggestions on this forum, I wanted to say thank you to all participants to this topic.
My final choice is PEBBLE WOOL from Maharam (thanks donsof!). This is exactly what I was looking for : wool, stretch, and with a boucle texture. They have a very limited choice of colors (9), but I will choose among them, because this fabric is just great. I know that others here were looking for the same kind of fabric (wool with stretch), so here is some good references from all what I received :
N°1 from far for STRETCH :

(this one is certified 2 way stretch 10%).
About Fabrics with kind of boucle texture, Maharam Peeble Wool is the best from far. Kvadrat Tundra 2 is very interesting too, even if this is not exactly boucle. There is also Knoll Classic boucle, but personally I think that the texture looks quite bad!
