Without photos or a precise knowledge of what process caused which effect it is hard to say. I can see two possibilities. First is that Brazilian rosewood is black when freshly cut. UV light bleaches it very much. In my experience the bleached layer is not very thick so a little bit of wood removal will change the color a lot. Second is that there is a chance of a chemical reaction with steel wool and the tannins in the wood, perhaps facilitated by some of the chemicals you are using. I think this is less likely though. I think you are just removing the bleached wood in spots with the steel wool and definitely with an orbital sander.
I think you should ignore it. It will eventually bleach itself back to match. Might take a while. If you must speed up the process then you need to get some extra UV light.
I would not even think about messing around with any other bleaching techniques. They either will not bleach the wood or you will destroy the table entirely.
