The proof is in the pudding... or in the cutting of mustard... or something like that.
It's important to remember that "form equals function"... an idea lost on too many flatware designers. Unless you really don't care at all, remember to pay attention to the business end and try before you buy. So many of the great-looking designs simply perform poorly in use.

Roger that tktoo... Over the last few years I've collected here and there a set of Dansk "JETTE". While I find them incredibly beautiful to look at, I have found them somewhat awkward and disappointing to use, and almost always forgo them in favor of the decidedly less "cool" variation V...but what a joy they are to handle...

to tktoo's comment. If you can, try before you buy or buy a single setting of what you were interested in and try it at home a few times. There are some very cool looking patterns out there that do not function well and want to roll in the hand. Dansk Odin is another one of these. They seem to need a bit of width and or flatness to the handles to work. I use Quistgaard's Dansk variation iv. The have good balance and added texture (essentially knurling) to the handles that make them very stable. I also use a partial set of a Lauffer Bedford which are quite nice. Many good lauffer sets are undervalued as well.
Cool cutlery
I also agree with tktoo. Function is key with cutlery. After purchasing a number of single knives from different manufacturers, I learned that extremely sleek cutlery with thin handles, although beautiful, tended to rotate in the hand during use and were not extremely comfortable to hold for extensive periods. I was looking for everyday cutlery with a satin finish, (which limited my selection), and ended up with the iitala citterio 98 series. I have had the set for a number of years now with no complaints.
