Maple vs Red Oak in a Natural Stain for Kitchen?

We are going to be remodeling our kitchen and getting natural cherry cabinets and stainless steel appliances. Our walls are currently white, and we have high ceilings in almost the whole house. We currently have a honey colored red oak floor in the kitchen & hallway, but it needs to be refinished after 10 years. Since we think the contrast of color from cherry to a light colored floor would look great, we need to either go with simply refinishing a still very good floor and do natural stain on the red oak to make it lighter, replace it with maple, or natural bamboo (although I'm reading some big problems about bamboo). I would appreciate some thoughts!

i wouldn't
mix up two kinds of wood; from the floor (oak) with another wood for the cabinets (cherry), even when the oak is red, it will never be the same color. the 'drawing' in the woods from oak or cherry are too different to match or 'go together'. or you match the wood; install a kitchen in oak, or be sure that the color is really different. don't forget you are having lots of different colors; grey stainless steel, whit walls, red cherry cabinets and honey oak; try to eliminate at least one color.

They are going to be different
That is the reason we are going to go really light on the red oak. In it's natural color, it's more golden blond than red. It's not as clear as a maple can be, but we're not trying to match the honey color to the cherry cabinets, we are trying to go way different in color. Does anyone have natural red oak floors and american cherry cabinets?

Oak floors
Whatever you do, do it throughout the house. It's a real luxury to have consistent wood floors throughout a home.
