Go to any big box home...
Go to any big box home improvement centre as stated above. In the wiring department you will have an assortment to chose from. Find the one that looks like white tubing, 5/16ths of an inch or so in diameter. It's white with no ribs.
A very common wire and not difficult to find. Three wires inside, 2 and a ground. Get a little more than you think you need. Looks great for pendant lamps.

Well, the following places don't have the correct cord:

It's pretty hard to find anyone that has a round cable with three conductors in it (3x18AWG). Home Depot came close, but the cable was only available in black.
I'm in the states, so purchasing out of Europe would be a bit of a hassle considering I only need about 6 feet of cabling.
Going to continue the hunt, but at this point, I'm thinking I'll have to find something online. Platt seemed like they could do it, but it would be a special order with a minimum purchase amount. I think they are used to working with contractors that order at least 250 feet at a time.

I've done some additional research and I've found that the particular cabling needed is 18/3 SJT, which means that it's 18 gauge, 3 conductor (hot, neutral, ground). The SJT means it's stranded, junior service (up to 300V) and has a thermoplastic jacket. I believe all of these elements are important: the stranded wiring makes it more flexible, the junior service makes it rated properly for lightbulb power, and the jacket is rigid enough to support the weight of the pendant.
I've found the cabling through a few online cabling manufacturers, but the cost is pretty high due to shipping. Again, I think they are more set up for selling by the spindle as the minimum shipping fee is around $30. There are also numerous computer power cords for sale on amazon that seem as though they would work (the cable is 18/3 SJT). I'm hoping the final diameter with jacket ends up being about the same no matter what manufacturer the cable is from.

Figured something out. I was at Target and was looking for salvageable products and came across an 8' white three prong extension cord. The brand is "Woods" and it's actually called a garden cable or something to that extent. The cable rating is 16/3 SJT but the diameter looked about right and it only cost ~$6.
Got it home and after a short bit of work I have my pendant hanging from the desired height. The color isn't the soft cream color of the original, but I don't think I would have been able to find that color anywhere. Very happy with the outcome and the price. Hope this helps someone else!
