After all they should be 'the spirit of our times'.

But most of the times are followed as a religion, as a rule, as a belong or not belong.

In our societies, where we have 'Rights and Duties', trends most of the times end as a duty when should be a right.

Ignoring them at all, is like ignoring our time...

Martin Churba, a local desiner said that:
trends are to design what the wind is to a sailboat.
(las tendencias son al diseño lo que el viento es a un velero)

How to deal with them?

.
Be not the first to adopt a trend...nor the last to cast it aside...

Everything in its right place.
It's a personal decision. I find myself carefully trying to avoid trends, in most cases. That's just 'cos I have a thing about not being sheeple. (I also don't like interiors that look like there was too much thought put into decorating them). In following trends, you're just doing what you're told to do, and showing that you can follow the leader. In ignoring them, you're putting a bit more of yourself in your decisions. (But I'm also aware that sticking to classics can also be following a trend). I value that more, and couldn't care less if my choices don't reflect my era. I'd rather they reflect me. That said, I stuck some of those trendy vinyl wall decals in my bedroom the other day (to lend some interest to the wall). Despite being very conscious about the trendiness aspect of it, and that it could be dated soon, or maybe is already. Oh well, it's starting to fall off by itself, so at least it is self-correcting trendiness.

Absolutely
Whilst one might think they are avoiding trends and fashion, it is nigh on impossible...
Any look back at, for example, Homes and Decorating magazines show even 'classic' and 'timeless' interiors to be very much of their time, similarly with architecture, graphics and for obvious reasons, fashion.
The zeitgeist, the social spirit of the time is inescapable in all areas- current affairs, exhibitions and movies, fashion and the arts, literature, architecture, music, electronics, product, and even politics, economy and ecology
As Karl Lagerfeld is quoted as saying:
'I want to be informed, to know everything, to see everything, read everything. You mix all that, then forget about it and do it your way'
His way, as he calls it, is then of course totally of the zeitgeist..I'd pretty much say this is true of any decent designer, whatever their discipline.
