I've read about older chairs having a 5-2-5 or a 4-2-5 bolt pattern. Do modern chairs use 4-2-4 and if so, when did they go to that?

Yes.
Evans chairs and first-year HM chairs were 5-2-5, then HM switched to 5-2-4 until the chairs went out of production in the mid-60s.
Production restarted in 1994. Brand-new chairs are 4-2-4 and my 2004 chair is 4-2-4; it's likely that all of the chairs built since 1994 are 4-2-4, but I don't know that for certain.

You make us sound like a bunch of motorheads. "My '49 LCW has a 5-2-4 under the hood and an aneline dye finish".

Side question, is there anything one should use to treat the wood veneers?
