Foam density for a vintage danish sofa (knock-off)

Hi, I hope folks can help. I bought second-hand vintage sofa, looks danish style with the wood frame. (like link below) I am have the three seat cushions and three back cushions replaced, new foam, new fabric.

The upholsterer recommended medium feel high density seat cushions with a dacron wrap. soft back cushions with a dacron wrap. The original cushion have no dacron wrap, I can't tell the density.

I'm wondering if the soft back if appropriate for the style. I don't want slumpy, cushy back. I want the nice tailored clean look of the original piece.

Any advice is appreciated.

If you can't trust your upholsterer to choose the foam...
... then you should find another upholsterer.
Seriously, this is his job. Once you've described what you want and he's repeated it back to you, you should be able to leave the choice of materials in his expert hands. If you don't think you can do that -- and if it's not just because you're a control freak -- then you're working with the wrong guy.
