I think I can fit in oysters. European oysters are saltier and smaller than the Lousiana variety. NW oysters are new. Had some great oysters in Cancale in Bretagne.

If you love coffee, the best...
If you love coffee, the best here is Milstead in Fremont (thought the other places suggested are good too--Milstead takes it to another level though)

Seattle
Great place for lunch on first at Virginia is Le Pichet. A true French bistro.
I too roast coffee and love Victrola. I think it's on 15th. If you can make time, see the Olympic Peninsula and head into the Olympic National Park.
Damn good architecture...

Come as you are
Macklemore is dandy but there's no shame in reliving the glory days of the Seattle music scene while you're here. Tune in to 90.3 (KEXP) while you're at it.

To all
I have just spent a fabulous 3 days in Seattle. I arrived from Sweden by way of Paris en route to Honolulu.
The weather was fabulous. Perhaps the fineast summer weather I have seen for years anywhere. There were festivals going on simultaneously in Georgetown, Chinatown and Ballard and on Sunday the flera market in Fremont. Mt. Rainier was unobscured and magnificent and the Olympics were lovely. Seattle is Great.
Thanks to all for the suggestions. Didn't manage half of them but they helped us get a feel for the city and how much there is to do. One thing no one mentioned were the people who were open , helpful and friendly.
Thanks to all.
