I used to be jealous of my friends who always got to have these for lunch while I was stuck with my mother's awful (or so I thought then) home-cooked food. Silly me!

Yum! I haven't made "Ambrosia" for awhile, I think it's time
My recipe is similar to your mom's, Riki, except when I make it I first add the mini marshmallows to a 16oz container of sour cream, let it go overnight so they mostly dissolve.
I use fresh apples (green and red), bananas, canned pineapple and Mandarin oranges as my minimum base fruit set, and whatever else I might have around.
